Golden Monkey
Golden Monkey enjoys a wonderful reputation of being one of the most delicious and beautiful black teas. This is in part because it comes from a varietal most often reserved for silver needle white tea: Da Bai. Handpicked Golden Monkey contains only the bud (which turn gold from oxidation) and first leaf (dark brown) resulting in an elegant, flavorful, smooth black tea with little or no astringency. Notes of peaches, honey, sweet potato, and dark chocolate. This Fujian black tea will win you over with its sweet drinkability that lasts for many infusions.

Brewing Guidelines: Gaiwan/Yixing: fill 1/3 full with dry leaf. Steep 25-30 seconds with 195° water for first three infusions. Add 10 sec to each additional infusion. Teapot/mug: 1 tablespoon of leaf per 8oz of 195° water. Steep 3 minutes for first 2 infusions, 5 minutes for each additional.
For Iced Tea: 2 tablespoons of leaf per 8oz of 195º water. Steep for 10 minutes, strain leaves, and let cool to room temperature before pouring over ice or placing in fridge. For Cold Brew: 2 tablespoons of leaf per 6oz of cold water. Place in pitcher, stir to fully submerge leaves. Cover with lid and place in fridge overnight ~12hrs. Pour over ice and enjoy!
